Above and beyond

Ya'll, today my mother is driving into Austin from Albuquerque. This is a 12 hour drive and she left at 5am this morning. The only purpose for her trip is to use her skills as an Architect to do an informal assessment of a few houses Tony and I are thinking of purchasing. She is expecting to roll into town around dinner time (what with lunch breaks, stopping at her grandparent's grave in Sweetwater, getting lost, etc). So she's gonna be hungry when she gets here. What do you feed a lady who has gone above and beyond? Will I rock this much as a Mother? Doesn't seem possible.

Don't worry so much about the feeding - just buy that saint of a woman a massage...she's going to need it after all of that driving!

My mom, as you know, is the same way - only with medical advice. As a nurse (and a damn excellent one, too!), she patiently answers every question friends near and far call to ask once they have perused WebMD and had the requisite freak out that what they have is not REALLY a hangnail, but rather diabetes, malaria, the plague, etc. She's always calm, rational, and willing to use her soothing mental health voice...and if that doesn't work, then she rolls her eyes and unleashes the Italian Smack Down! It's always funny when it happens to someone else...

Serve your mama Ecua-delight:
Slice a purple onion thin as possible, then cut those circles in half, then throw it in a bowl with lime juice -- about two limes. Add about .5 tsp salt. Let it sit for ten minutes.

Meanwhile, chop about five or six tomatoes. Drain a can of kidney beans. Drain a can of corn. Chop a bunch of cilantro. Mix all together. Top with chopped avocado. Serve cold or at room temperature over hot rice.
(Meat eater option: sub a can of tuna or two for the kidney beans.)
Serve with a lime wedge on the side who like it extra limey. On most recipes I think one can skip one or two ingredients. But not this one.

SIde note: this onion-lime juice-salt beginning is also the beginning of Ecua-salad: after ten minutes, add equal parts chopped tomato, sliced carrot, and chopped cucumber. A delicious side dish. Actually, experiment with the amount of lime to find what you like best... sometimes I use as many as four limes, depending on how I'm feeling that day.

But I should warn you, Ecua-delight plus Ecua-salad is a little bit of overkill if served together. For desert, consider mangoes and-or bananas with lime juice.

For the real Ecuadorian experience, enjoy pineapple or blackberry juice with this meal.

This is all dependent, of course, on finding avocados that are ready to be used tonight. And mangoes.

Or just order a pizza.

And yes, you will be that good of a mother.
